Restaurant turns trash into delicacy

A restaurant in England is serving dishes made from waste food salvaged from supermarkets' trash. The freegan thinking 'Skipchen' in Bristol serves appealing meals such as 'kiln roasted salmon with watercress and white wine sauce' using ingredients that are past their sell-by date but within the use-by date.

Run by Real Junk Food Project, a non-profit action group, its aim is to highlight the vast quantities of food wasted in modern society. Cafe manager Sam Joseph told The BBC that the meals are safe to eat because they use the ingredients immediately, while they are still fresh enough to consume.

National Institute of Health estimates that 40 percent of the food produced in the US goes to waste. According to Jonathan Bloom, author of American Wasteland, that's roughly $250 billion worth of food being lost throughout the supply chain every year.
